I was talking about the first video, as Senna was slowing down he didn't take his hand off of the steering wheel.

maybe he used another part of his body? i often drive on the lfs oval using my chin when eating!

Yes he does take his hand off the wheel to downshift. It only requires the slightest flick of the wrist to swap ratios in cars like that so it's not a very pronounced motion, but he definitely takes his hands off the wheel.
